Vegan Almond Croissant Recipe

What do you do when you have some leftover croissants? You can just eat it of course but if you want to upgrade it, you can make an almond croissant instead. I also have a vegan croissant recipe on my blog. You can you freshly baked croissant to make almond croissant but I prefer using leftover since the croissant will be a little more firm and easier to work with than dedicate croissant.
Make: 5 Croissants
Time: 30 Minutes to 3 Days
5 leftover croissants (You can find vegan croissant recipe here.)
1 tablespoon of Ground Flaxseed 2 Tablespoon of Warm water 2 Tablespoons of all propose flour 1/4 cup of cane sugar 1/4 cup of soy milk 1/2 cup of almond flour 2 teaspoons of almond extract Simple syrup 1/4 cup of water 1/4 cup of sugar 1/8 teaspoon of vanilla bean powder or 1 teaspoon of vanilla extract
Topping: 1/2 cup of sliced almond
Optional Powder sugar for dusting
Make simple syrup
Simply heat up the sugar, water and vanilla bean powder on the stove top until all the sugar are dissolve into the water. Set aside to let it cool down.
Making almond cream (Frangipane):
1) In a medium bowl, stir together ground flaxseed and water. Let it sit for 1 minute till it thickens.
2) Add in flour, sugar, almond flour, and almond extract. Mix and slowly add in soy milk.
3) Set almond cream in the fridge until it ready to use.
Assumable the almond croissant:
1) Cut the leftover croissant in half. The hot dog way. 2) Brush the inside top and bottom of the croissant with simple syrup. 3) Smear in almond cream on the bottom layer, and close the croissant then smear more almond cream on top of the croissant. 4) Press the top of the croissant into almond slices.
Put the croissant in 350 F ( 177 C) preheated oven for for 10-12 minutes. Optional step: Dust the almond croissant with power sugar. Enjoy!
