Horchata recipe (Dairy Free)

Super delicious and simple summer beverage, Horchata. Its a Mexican rice drink. Very refreshing yet satisfying drink. I enjoy this with my family for 4 of July, and it a big hit.

Remember this recipe is not designed to be super sweet. I recommend adjust the sweetness content as you go. This recipe is not too creamy or heavy either, it's meant to be light and refreshing. If you prefer more of a creamy consistency. Simply add in extra soy milk.


Horchata recipe (Dairy Free)


Make 3 1/2 cup | Serve : 3.5 serving | Prep Tim: 5 minutes | Total time: 5 hour -12 hour


Ingredients:

1 cup of white rice (uncooked)

1/4 cup of sliced almond

2 Cinnamon stick or 1 teaspoon of cinnamon powder

1/4 teaspoon of vanilla bean powder or 1 teaspoon of vanilla extract

4 cup of water

1/2 cup of soy milk or any plant-based milk you preferred.

1/4 cup of cane sugar or any sweetener you like.


Optional:

Cinnamon powder sprinkle on top.




Instruction:

  1. Bland in together rice, almond, cinnamon sticks, vanilla bean powder, and 4 cups of water for 20-30 seconds until the rice and cinnamon are chopped into tiny pieces but not into powder.

  2. Cover and refrigerated for 4 hours or overnight.

  3. Strain the liquid and add in soy milk and sugar. Stir and enjoy.
