Easy & Healthy Vegan Banana Bread

Get creative with your banana bread. Use this recipe to guild you to your favorite banana bread recipe. You can simply use this recipe to make gluten-free recipes by replacing regular flour with GF flour.

Ingredients:


  • 4 ripe bananas (4 for medium, 3 for large, 6 for mini)

  • 1/4 cup coconut oil (you can use any oil or even vegan butter)

  • 1 3/4 cup all-purpose flour

  • 1/2 cup coconut sugar (or brown sugar or even cane sugar)

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 cup nuts or chocolate chips

  • 1 Flax "egg" (1 tbsp grounded flaxseed + 2 tbsps of warm water)


Instruction:

  1. Preheat the oven to 350 Fahrenheit

  2. Make the flax egg by combine grounded flaxseed with warm water in a medium bowl, stir until it combined and let in sit for 1-2 minutes for it to thicken.

  3. Add in oil and coconut sugar. Stir until everything is combined

  4. Add in the banana and mashed everything together.

  5. Shift in the rest of the dry ingredients together in the mixture except nuts. (Flour, baking powder, and baking soda.) Mix everything.

  6. Fold in the nuts with the batter.

  7. Add the batter in a greased loaf pan or line it with a parchment paper.

  8. Baked in the oven 55 minutes to 1 hour.

I recommend letting it cool down for 10 minutes before slicing. Storing: let it sit in the counter up to 3 days make sure you wrap them with the plastic wrap or an airtight container. Freeze: wrap it individually and fries up to two weeks. Let it sit over counter overnight before eating.
